From Leaf to Powder: How Matcha Is Made
The journey of matcha begins three weeks before harvest, when tea plants are shaded from direct sunlight. This forces leaves to produce more chlorophyll and amino acids (especially L-theanine), resulting in a sweeter, more vibrant tea. Only the top two leaves of each branch are hand-picked—a labor-intensive process.
After steaming to halt oxidation (preserving color and nutrients), the leaves are dried and deveined, becoming “tencha.” Finally, granite stone mills slowly grind tencha into a fine, talc-like powder—just 30 grams per hour. Grinding generates heat, so the slow speed protects delicate flavors. This meticulous process explains why authentic matcha costs more than regular green tea. The final powder is light-sensitive and should be stored airtight in a refrigerator. When you sip matcha, you’re tasting centuries of craftsmanship, from shaded fields to stone-ground purity.
